Ya Chae Jeon (Vegatables Pancake)



What a quick easy to do korean recipe with a simple twist, if you are in a hurry. Light, delicious, healthy, and most importantly low in calories *makes 8 small servings Ingredients: 1/2 cup plain pancake mix 1/2 tsp salt 1/4 tsp ground black pepper 1/4 cup carrots, shredded 1/4 cup white cabbage, shredded 1/4 cup leek, shredded 1/4 cup onion, shredded 1/4 cup mushroom, shiitake (optional) 1 egg 1/4 cup milk 1 Tsp olive oil Dipping sauce 1 Tsp low sodium soya sauce 1/2 Tsp white vinegar 1 tsp sesame seeds 1/2 tsp crushed red pepper Method: Start by preparing the dipping sauce and set aside so the flavors well combined Mix all the vegetables together in a bowl with egg and milk In a larger bowl mix the flour,salt, black pepper together then combines it with the vegetables Heat a non stick pan over a medium heat with olive oil then spoon the mixture into small cakes Nutritional Facts: The pancake Total calories/ serving: 59 Protein: 2.2 g Carbs: 8.7 g Fibers: 0.6 g Total fats: 1.8 g The dipping Total calories/ serving: 8 Protein: 0.2 g Carbs: 0.8 g Fibers: 0.2 g Total fats: 0.4 g
