What if Eggs are not an option ?


For some, eggs are off limit due dietary references, restrictions, of allergies. In any case here are some alternative and option you could get benefit from, keep in mind that one large egg is out 1/4 cup:

Scrambled egg option: Sautéed Tofu can replace scrambled egg. cube 3 oz firm tofu then sauté while slightly smashed it to resemble the look of scrambled egg. Add pinch of turmeric for an egg- like yellow color.

Binding in baking: chia seeds could do the work. Mix 1 Tsp chia seeds with 3 Tsp water; let it stand for 20 min. the mixture will become a recipe-ready gel that acts as binder and holds ingredients together

Leavening in baking: when you need a baked good to raise, make chia seeds gel as above then add 1/2 tsp of baking powder along with the chia gel to the batter.

Moistness and richness in baking: these alternatives are as good as eggs as they add flavor to your baked goods: mashed banana, applesauce, pureed avocado. Use 1/4 cup of of any of these plant-based ingredients to replace one large egg.
