Strawberry Poppyseeds Chicken Salad recipe


Sweet idea for a light and flavor any time. Love the interaction between savory and sweet taste, this salad is a perfect pick

*makes 4 servings

Ingredients:

Salad:

8 cups romaine lettuce

3/4 cup poppyseeds dressing


1 grilled chicken breast, cut into strips

1/2 cup blueberries, fresh

11 oz. can Mandarin oranges, drained

3/4 cup pineapple, fresh, cut into chunks

3/4 cup strawberries, fresh, sliced

1/3 cup toasted pecans (optional)

Homemade poppyseeds dressing:

1/4 cup white sugar

1/8 cup stevia sweetener

1/2 cup white vinegar or apple vinegar

1/8 cup orange juice

1 teaspoon salt

1 tablespoon Dijon mustard

1 teaspoon minced onion

1 cup vegetable oil

1 tablespoon poppyseeds

Method:

In a large bowl mix all the ingredients together, then toss in the dressing.

For the dressing preparation, .n a blender or food processor, combine the sugar, stevia, vinegar, orange juice, salt, mustard, and onion, and process for 20 seconds. With the blender on high, gradually add the oil in a slow, steady stream. Remove from the blender and stir in the poppyseeds.
