Spicy BBQ Chicken With Roasted Red Potatoes recipe
The traditional BBQ sauce for grilled chicken accompanied with roasted red potatoes.
*makes 6 servings
Ingredients:
Spicy BBQ chicken
2 Tsp vegetables oil
1/4 cup onion, finely chopped

1 clove garlic, minced
3/4 cup ketchup
1/3 cup vinegar
1 Tsp Worcestershire sauce
2 tsp brown sugar
1 tsp dry mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 (5 oz) bottle hot pepper sauce
1 kg chicken breast cut into pieces
Roasted red potatoes:
2 large red potatoes cut wedges
1/4 cup olive oil
1 1/2 tsp kosher salt
1 tsp ground black pepper
2 Tsp garlic, minced
2 Tsp fresh parsley, minced
Method:
Heat the oil in the skillet over a medium heat and cook the onion and garlic until tender. Mix in ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, salt, pepper, and hot sauce. Bring to a boil. Reduce the heat to low ands simmer for 10 min.
Preheat grill for high heat. Place the chicken on the grill and brush constantly with the sauce and cook 8 to 15 min on each side until juices run clear.
For the potatoes, cut the potatoes and place in a bowl with olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven preheated to 400 F for 45 min to 1 hour. Flip twice during cooking. When it is ready toss in parsley and season to taste. Serve hot along the chicken.
