Mediterranean-Inspired Quinoa Bowl recipe


Complex carbs+ healthy fats+ protein= a dish can not lose !

*makes 4 servings


Ingredients:

2 cups quinoa (cooked)

1 cup cucumber chopped

1 roma tomates diced

1/2 cup kalamata olives

1/2 cup feta or goat cheese

4 Tsp fresh cilantro chopped

1tsp ground cumin

1 lemon juice

sea salt and black pepper to taste

Method:

Cook quinoa according to instructions and fluff with fork. Chill the quinoa in refrigerator for at least 1 hour

In a bowl, toss in all of the ingredients then season with salt and pepper

Enjoy and serve immediately
