Healthy Chocolate Chicken Mole recipe


Little inspiration from Mexico, a healthy, easy quick span traditional chicken mole

*makes 3 servings


Ingredients:

3 medium chicken breast

1/4 medium red onion chopped

1 Tsp tomato paste

1 tsp garlic paste

4 Tsp chicken broth

1 tsp organic raw honey

1 tsp cacao powder

pinch coconut sugar

pinch chipotle chili pepper

pinch cayenne pepper

pinch ground cumin

pinch ground coriander

Method:

Preheat the oven to 375 F. Cut a red onion into slices, then shop cilantro.

Set a nonstick skillet on a medium-high heat, spray with coconut oil then toss in garlic paste and red onion. Cook until red onion are brown and soft.

Reduce to medium heat, then add tomato paste, chicken broth, honey, cacao powder, and coconut sugar. Mix.

Add cumin, coriander, chili powder, cayenne pepper and chicken broth. Mix, reduce heat and allow the sauce to thicken.

Pat chicken breast dry with paper towel to remove excess water and place them on nonstick baking sheet.

Evenly spread the mole sauce on the chicken breast and bake for 20 min

Slice the chicken breast and enjoy.
