Fuji Apple Chicken Salad Recipe


It was inspired by my favorite bakery Panera Bread, simple and delicious to make at home!

*makes 2-4 servings

ingredients:

Salad:

1 Tsp extra virgin olive oil


2 boneless, skinless chicken breasts

1 bag mixed greens

quarter of a red onion, thinly sliced

2 cups of apple chips

1 cup glazed pecans

1/2 cup Gorgonzola cheese, crumbled (feta cheese works as well)

1 cup freshly dried tomatoes (optional)

White Balsamic vinaigrette:

1/2 cup extra virgin olive oil

1/4 cup white balsamic vinegar

2-3 Tsp honey

1/2 tsp sea salt

1/4 tsp freshly-cracked black pepper

1/8 tsp garlic powder

Methods:

Preheat oven to 350 F. Prepare a baking sheet with aluminum foil, then mist with cooking spray or oil.

Brush chicken breast with olive oil, then season with a pinch of salt and black pepper. Place it on the baking sheet and cook for 20-30 min or until the juice runs clear. Remove and let the chicken breast cool for at least 10 min, then thinly slice or shred.

Toss the remaining salad ingredients together in a large bowl, and drizzle with vinaigrette. Serve immediately and enjoy.
