Eggplant and Arugula Salad Recipe


A funky recipe that you will love absolutely, Quick and easy to reach ingredients

*makes 4 servings


Ingredients:

Bunch of Arugula

1 small Eggplant

1/4 cup Pine nuts

1/4 cup pomegranate

1 Tsp olive oil

Dressing:

1 lemon juice

1 Tsp pomegranate molases

1 Tsp olive oil

1tsp garlic paste

1 Tsp balsamic vinegar

pinch of ground cinnamon

Method:

Start with preparing the eggplant. Cut it into small cubes and grill them after brushing them with olive oil. When they are golden brown grab a plate and place the arugula at the bottom then cover it with the eggplant cubes, pine nuts, and pomegranate. Drizzle with the dressing and enjoy.
