Chicken Burrito


This recipe is really rich in nutrients as it filled with colors that satisfy your eyes

* makes 8 burrito

Ingredients:


chicken marinade

500 g chicken breast

1/4 cup Fajita spices

Filling

1/4 cup brown rice

1/4 red beans

1/4 corn

2 medium avocado

cheddar cheese slices

Salsa fresca

2 tomatoes

1/4 cup cilantro

1/4 cup red onion

1 serrano pepper

2 cloves garlic, minced

1/2 tsp salt

1 lime, juiced

Yogurt sauce

1 cup greek yogurt

1/2 tsp garlic powder

1/2 tsp soya sauce

1/2 tsp salt

pinch of dill

1/8 tsp crushed red pepper

8 corn tortilla bread (8")

Method:

*for the chicken

wash off the chicken with lemon juice to remove any fats residue. marinade the chicken well with the spices, do not add any oil or salt and sit aside

*for the salsa

dice the tomato into medium cubes as well as the red onion. combine with the cilantro and the rest of the ingredients and sit aside

*for the yogurt

combine all of the ingredients togethers and sit aside

*for the filling

prepare the vegetables as you cut the avocados into small cubes (leave it to the last to preserve avocados from darkening)

for the brown rice, cook in just a fair amount of water and let it cool down

after you have all the ingredients prepared, grill the chicken on a wide pan sit on a high heat until its browned and crisp. once it cools down a bit slice it into strips

grab the tortillas and fill them up with the chicken and vegetables and 1 Tsp of the salsa and yogurt

wrap each tortillas and place it on a hot rigged pan to get its outer skin crisp
