Chicken Quesadillas

Classical recipe from Mexican cuisine

*Makes 16 servings

Ingredients:

2 Tsp olive oil

500 g chicken breast fillet, cut into strips

1 Tbs taco or cajun seasoning mix or (chicken seasoning)

1 tsp crushed chili pepper

1 tsp minced garlic

salt and pepper for seasoning

1 Tsp olive oil

1 small onion, cut into slices

1 green bell pepper, cut into cubes

1 red bell pepper, cut into cubes

1/4 cup corn

Mozzarella cheese

8 large flour tortillas

Pico de Gallo:

1 large tomato, cored

1 small red onion

1 cup cilantro

1 jalapeños

1 lime

salt

Method:

Start sprinkling the chicken with salt, pepper, and taco seasoning. heat the 1 spoon of olive oil and grill the chicken on the skillet. When it is done remove the chicken and sit aside.

In the same skillet add the the remaining olive oil over the high heat. add the onion, and bell pepper and cook until they are slightly brown.
