Chicken Quinoa Sliders recipe


Forgo the bread buns and add a bit sweet- savory taste to this recipe through innovative way using quinoa and sweet potato

*makes 5 servings

Ingredients:


0.5 Kg lean ground chicken

3/4 cup quinoa (uncooked)

1/3 to 1/2 cup feta cheese

1 egg

1/4 cup red onion

1 clove garlic

1/2 bell pepper

1 Tsp ground cumin

1 Tsp smoked paprika

1/2 Tsp sea salt

Pepper

Dried or fresh chopped cilantro

Filling:

Tomato

BBQ sauce or ketchup

Red onion

bell pepper

Lettuce

Bun:

Sweet potatoes

Method:

Cook the quinoa and sit aside. Chop the red onion, garlic, and bell pepper. Slice the tomatoes as well.

For the sweet potatoes, thickly slice them and place on a baking sheet spray with olive oil and bake for 30 min.

Mix the chicken, quinoa, onions, garlic, bell pepper, egg, seasoning and goat cheese together in a bowl.

Form patties to desired size and cook on a nonstick skillet or grill.

In between the sweet potatoes slices, stack the lettuce, tomato, chicken patty. Top with BBQ sauce or ketchup. Garnish with dried or fresh cilantro.
